The most common casks used as a finish are without a doubt ex-sherry casks (the best known are PX & Oloroso). These types of barrels give the whisky a dark color and numerous sweet aromas. The longer the finish, the more color and flavors change.


Our 10th release was also finished, not in an ex-sherry cask but in the cask of an earlier bottling of ours, namely the Caol Ila 2016 that we launched last year. Caol Ila is peated whisky, but Strathmill is not. This type of finish is therefore described as "peated by maturation", which means that the peat flavor does not come from the distillate, but via the barrel in which the whiskey was matured or finished.


This Strathmill - bottled at 57.2° (cask strength) - immediately releases a layer of saltiness & peat in the aromas that pushes the original grassy Strathmill character into the background. This is further enhanced in the taste, although this ultimately became a fairly good peated whisky.

NOSE

Apple, hints of citrus/lime but also salty and sweet due to the Caol Ila barrel

 

TASTE

Caol Ila character is now bursting out. Some citrus again. In the distance some of the grassy, ​​vegetal character of Strathmill

FINISH

Long! Peat flavor lingers for a pleasantly long time
